Your choice of smoked sausage or grilled chicken, these red beans are stewed with tomatoes, onions, peppers and Acadian spices.  Served over rice with corn bread.  

Shrimp-n-Sausage Jambalya

With Bourbon Street cheese bread, this is a rice dish highly seasoned and strongly flavored.

Sausage'n'Chicken YaYa!

Boneless chicken breast wrapped around andouille sausage, seasoned with creole spices, then backed.  Served with herbed rice, Cajun country rusty tomato, mushroom gravy and corn bread.        

I can't remember the name of this dis but trust there was yumminess involved!!!

At work my co-workers always comment on my weight or how little I seem to eat. But in truth...I'm a little piglet! I can eat a lot....a lot of the foods I love. Its common knowledge, well at least for me anyway, that lunch time does not allow much time to indulge in the foods you love. 

This is why I take my weekends and time off so serious as to my activities and the foods I consume. I enjoy eating healthy, but every so often I like to get loose!!! HEE HAW!!! 

I have told you about brunch, now let me tell you about dinner! Chef Wayne's Big Mamou restaurant located in Springfield MA is one of my favorite restaurants. Definitely in my TOP 5! Every dish is unexpected delicious as the menu can change according to the food market. 

A few of my favorite dishes are 1. thunder thighs, 2. the cheese bread, 3. fried oysters, 4. seafood jambalaya.....hell I love it all. Everything is well seasoned and not too spicy, its simply a party in your mouth. 

If ever in or passing through Springfield MA, its worth a stop! FYI: the staff is super friendly and its BYOB!!! So pack up the cooler and enjoy!!!!
